Vegetarian / Meatless
- Preheat oven to 350°F. Butter the bottom and sides of an 11x7-inch baking dish. Add half of the breadcrumbs, rotating baking dish to coat the bottom. Place bread cubes evenly in baking dish. Cover with half of the diced cheese.
- In a large bowl combine tomatoes, onion, green onions, parsley and garlic. Season with salt and pepper to taste. Spoon tomato mixture over cheese. Top with remaining breadcrumbs and cheese.
- Place baking dish in oven. Bake, uncovered, 30 to 40 minutes or until cheese melts and mixture is bubbly. Serve warm.
