Ingredients

  • 1 lb. sugar snap peas, sliced diagonally
  • 1/2 cup (1/4x1/4-inch) carrot strips
  • 1/2 medium red bell pepper, seeded, cut into bite-size strips
  • 1 green onion, sliced
  • 2 tbsp. brown sugar
  • 2 tbsp. fresh lime juice
  • 1 1/2 tsp. lime zest
  • 1 1/2 tsp. chili oil
  • 2 tbsp. chopped peanuts (optional)

  1. In a medium bowl combine sugar snap peas, carrot strips, bell pepper and green onion. Add brown sugar, lime juice, lime zest and oil; toss to coat. Cover and refrigerate at least 30 minutes.
  2. Just before serving, sprinkle with peanuts, if desired, and serve.
