Ingredients

  • 1 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 cup milk
  • 2 eggs, beaten
  • 2 tbsp. butter or margarine, melted
  • 2 cups shredded sweet potato
  • 4 bacon, slices cooked and crumbled
  • Vegetable oil
  • Syrup (optional)

  1. Combine flour, baking powder and salt; stir well. Add milk, eggs and butter; stir until smooth. Add sweet potato and bacon; mix well.
  2. Heat 3 to 4 inches of oil to 375°F in a Dutch oven. Working in small batches, carefully drop batter by rounded teaspoonfuls into hot oil. Fry 2 minutes or until fritters are golden brown, turning once. Drain on paper towels. Serve warm with syrup, if desired.
