- In a medium bowl combine strawberry halves, orange juice and granulated sugar; cover and refrigerate 30 minutes.
- In a small bowl combine mascarpone, cream, powdered sugar and almond extract; mix well.
- To serve, spoon the strawberry mixture into 4 stemmed glasses. Top each with one-fourth of the mascarpone mixture. Sprinkle with almonds and (if desired) top with fresh mint, and serve.
