Ingredients

  • 1 qt. strawberries, rinsed and hulled, cut into halves
  • 1/4 cup orange juice
  • 1/4 cup granulated sugar
  • 1 cup mascarpone
  • 2 tbsp. heavy cream
  • 2 tbsp. powdered sugar
  • 2 tsp. almond extract
  • 1/4 cup sliced almonds, toasted
  • Fresh mint sprigs (optional)

  1. In a medium bowl combine strawberry halves, orange juice and granulated sugar; cover and refrigerate 30 minutes.
  2. In a small bowl combine mascarpone, cream, powdered sugar and almond extract; mix well.
  3. To serve, spoon the strawberry mixture into 4 stemmed glasses. Top each with one-fourth of the mascarpone mixture. Sprinkle with almonds and (if desired) top with fresh mint, and serve.
