Ingredients

  • 1 lb. ground beef
  • 1/4 cup chopped onion
  • 1 (28-oz.) can spicy baked beans
  • 2 (10.75-oz.) cans cream of chicken soup
  • 1 (10-oz.) can diced tomatoes with green chiles
  • 1 (13- to 16-oz.) pkg. tortilla chips
  • 1 (8-oz.) pkg. shredded Mexican-style cheese blend

  1. Preheat oven to 350°F. In a large saucepan cook and stir beef and onion over medium-high heat until beef is browned; drain fat. Stir in baked beans, soup and tomatoes. Bring to boiling; reduce heat. Simmer until mixture thickens to desired consistency, stirring occasionally.
  2. Arrange 3 to 4 cups of the tortilla chips in a 3-quart rectangular baking dish. Spoon beef mixture over chips; sprinkle with cheese. Bake about 10 minutes or until cheese is melted. Serve warm with remaining tortilla chips.
