Ingredients

  • Salsa:
  • 1 large tomato, diced
  • 1/2 cup diced cucumber
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup diced red onion
  • 1 (15-oz.) can black beans, rinsed and drained
  • 3 tbsp. finely chopped fresh cilantro
  • 1 lime, juiced
  • Chicken:
  • 4 (5- to 6-oz.) boneless, skinless chicken breasts
  • Olive oil
  • 1 1/2 tbsp. dry rub mix for chicken*

  1. For the salsa: In a large bowl combine tomato, cucumber, bell pepper, onion, beans, cilantro and lime juice. Season with salt and pepper to taste. Set aside.
  2. Preheat grill to medium (300°F to 350°F). Brush chicken lightly with oil. Rub chicken with dry rub mix. Place chicken on grill. Grill 6 to 8 minutes per side or until an instant-read thermometer registers 165°F. Serve with black bean salsa.
