- In a large sauté pan heat oil over medium heat. Add onion; cook and stir until softened. Add garlic; cook 1 minute. Stir in olives, tomatoes, tomato sauce, paprika, cayenne, thyme, broth, and (if desired) giardiniera; bring to boiling. Reduce heat to low.
- Season both sides of fillets with salt and pepper to taste. Place fillets in sauce. Cook, covered, 10 minutes or until fish flakes easily with a fork. Transfer to a platter, and serve.
