Ingredients

  • 1 (15-oz.) can no-salt-added diced tomatoes, undrained
  • 1 large zucchini, cubed
  • 1 cup sliced white mushrooms
  • 1 small onion, chopped
  • 2 tsp. minced fresh garlic
  • 8 oz. sirloin steak, trimmed, cut into cubes
  • 1 cup whole-wheat gnocchi
  • 1/3 cup chopped fresh basil leaves

  1. In a large skillet combine tomatoes, zucchini, mushrooms, onion, garlic, and 1/2 cup water. Place over high heat; bring to boiling. Reduce heat; simmer, covered, 10 minutes.
  2. Stir in beef; cook, covered, 5 minutes. Add gnocchi and basil; return to boiling. Cook, uncovered, 5 to 10 minutes or until gnocchi and beef are tender and sauce thickens slightly. Season with freshly ground pepper to taste, and serve.
