Shrimp Taco Bites


  • 12 large raw shrimp, peels and tails removed
  • Nonstick cooking spray or olive oil spray
  • 1 tsp salt, divided
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 2 tsp chili powder
  • 1 large California Avocado
  • 1/3 cup sour cream
  • 1 tsp chipotle chilies in adobo sauce, finely minced
  • 2 tbsp freshly chopped cilantro
  • 24 scoop tortilla chips


  1. Preheat oven to 375° F.
  2. Cut raw shrimp in half to fit tortilla chips, arrange on a baking sheet with nonstick spray.
  3. Mix ½ tsp salt, lime zest, and chili powder in a small bowl. Sprinkle mixture over the raw shrimp and spritz shrimp with cooking spray or olive oil.
  4. Bake shrimp for 5-8 minutes or until shrimp turns pink.
  5. Meanwhile, combine diced avocado, lime juice, and remaining salt in a small bowl.
  6. Combine sour cream and chipotle pepper in another bowl.
  7. Assemble your shrimp taco bites by spooning 1/2 tsp of avocado mixture in a tortilla chip, followed by 1/2 tsp of sour cream mixture, then top with a chili-lime shrimp.
  8. Garnish with chopped cilantro and enjoy!
