Shrimp and Scallop Salad with Mango Dressing

Ingredients

  • 1/3 cup mango chutney
  • 2 tbsp. light or regular mayonnaise
  • 2 tbsp. orange juice
  • 12 oz. large shrimp, peeled and deveined (about 24 to 30)
  • 8 oz. sea scallops
  • 6 cups mixed salad greens
  • 2 peaches, pitted, peeled and sliced; or 2 nectarines, pitted and sliced
  • 2 cups red or green seedless grapes and/or melon cubes

  1. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). For the dressing, in a small bowl stir together chutney, mayonnaise and orange juice. Set aside.
  2. Thread shrimp and scallops alternately onto 4 (10-inch) skewers.* Place skewers on grill. Grill 5 to 8 minutes or until shrimp and scallops are opaque. Remove skewers from grill.
  3. Meanwhile, place salad greens on 4 plates; top evenly with fruit. Using a fork, push the shrimp and scallops off 1 skewer onto each salad. Drizzle with dressing, and serve.
