- Preheat oven to 375°F. Sprinkle scallops with salt and red pepper flakes; drizzle with oil. Coat a large nonstick skillet with nonstick cooking spray; place over medium-high heat. Add scallops; cook 2 to 3 minutes per side or until scallops are seared, and just opaque in the center.
- Place baguette slices in oven. Bake 5 minutes. Remove from oven and top each slice with tomato, mozzarella and 2 scallop halves. Sprinkle with basil and (if desired) drizzle with vinegar. Serve immediately.
