Ingredients

  • 2 cups corn kernels cut from cob (about 4 ears)
  • 1 tbsp. fresh lime juice
  • 1 tbsp. olive oil
  • Pinch of cayenne
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 2 tbsp. minced fresh cilantro
  • 1/3 cup shredded or finely chopped queso blanco

  1. Preheat oven to 400°F. Place corn in a shallow roasting pan; drizzle with oil. Roast 10 minutes or until corn is light golden. Transfer to a salad bowl.
  2. Combine lime juice, cayenne, salt and pepper in a cup; pour over corn. Add cilantro; toss well. Sprinkle with cheese, and serve.
