- Preheat oven to 375°F. Combine butter and garlic in a small microwave-safe bowl. Microwave on HIGH 12 to 20 seconds or until butter melts. Stir in olive oil.
- Place baguette slices on broiler pan, or directly on oven rack to crisp both sides; brush tops with butter mixture. Bake 7 to 9 minutes or until lightly crisped. Do not overbake. Remove and let cool.
- To assemble the crostini, spread 1 toast lightly with 1 teaspoon cheese, top with 1 tomato slice, and "pile" a portion of the shaved beef on the tomato. Repeat with remaining 23 toasts. Sprinkle lightly with Parmesan or parsley, if desired, and serve.
