- Preheat oven to 350°F. Grease a 9x9x2-inch baking pan; set aside.
- In a large bowl stir together flour, sugar and baking powder. Add milk, butter, egg, and vanilla. Using an electric mixer, beat on low speed until combined. Beat on medium speed 1 minute.
- For streusel topping, in a small bowl stir together chopped almonds and 1/4 cup butter; set aside. Spread half the batter in baking pan. Top with half the raspberries, half the chips, and half the streusel topping. Repeat layers.
- Bake 35 to 40 minutes or until golden. Serve warm, or let cool in pan on a wire rack. If desired, top with fresh raspberries and mint before serving.
