Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 1 cup milk
  • 1/4 cup butter, softened
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 cup fresh or frozen lightly sweetened red raspberries
  • 1 cup semisweet chocolate chips (8 oz.)
  • Additional raspberries, fresh mint (optional)
  • 1/4 cup butter
  • 1/3 cup chopped almonds

  1. Preheat oven to 350°F. Grease a 9x9x2-inch baking pan; set aside.
  2. In a large bowl stir together flour, sugar and baking powder. Add milk, butter, egg, and vanilla. Using an electric mixer, beat on low speed until combined. Beat on medium speed 1 minute.
  3. For streusel topping, in a small bowl stir together chopped almonds and 1/4 cup butter; set aside. Spread half the batter in baking pan. Top with half the raspberries, half the chips, and half the streusel topping. Repeat layers.
  4. Bake 35 to 40 minutes or until golden. Serve warm, or let cool in pan on a wire rack. If desired, top with fresh raspberries and mint before serving.
