Ingredients

  • 1 apple, shredded (3/4 cup)
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 1/4 tsp. pepper
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 3/4 cup shredded Gruyere or Swiss cheese (3 oz.)
  • 1 lb. baking potatoes, thinly sliced (or 3/4 lb. baking potatoes, thinly sliced, plus 1/4 lb. taro, peeled and thinly sliced)

  1. Preheat oven to 350°F. Coat a 1 1/2-quart baking dish with nonstick cooking spray. For sauce, in a medium saucepan cook apple in butter until tender. Stir in flour and pepper. Add broth and milk; bring to boiling, stirring constantly. Remove from heat. Stir in cheese, a little at a time; stir until cheese melts.
  2. Layer half the potatoes in baking dish. Top with half the sauce. Layer again with remaining potatoes and sauce.
  3. Bake, covered, 40 minutes. Uncover and bake 30 to 35 minutes more or until potatoes are tender.
