Pork “Al Pastor” Skewers

Ingredients

  • MARINADE:
  • 4 Tbsp Our Family Olive Oil
  • 1/4 cup Canned Pineapple Juice
  • 1/4 cup Orange Juice
  • 3 Each Garlic Cloves (peeled)
  • 3 Tbsp Apple Cider Vinegar
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Chipotle Peppers in Adobo Sauce
  • 2 Tbsp Our Family Worcestershire Sauce
  • INGREDIENTS:
  • 6-8 ea. 12” Bamboo or wooden skewers
  • 2 Lbs Pork Loin or Tenderloin, large 1” chunks
  • 1 Each Red Onion, Quartered large chunks
  • 2 Each Red Bell Peppers, Large Square chunks
  • 1 Each Our Family, canned Pineapple chunks, (reserve juice for marinade)
  • ADDITIONAL TACO INGREDIENTS:
  • Corn Tortillas
  • Cotija or Queso Fresco crumbled (specialty cheese in the deli)
  • Diced Pico de gallo (fresh divide)
  • Guacamole (fresh divide)
  • Fresh Lime wedges
  • cilantro leaves

Directions

  1. Transfer Pork to a clean cutting board. Cut lengthwise in half and then into smaller 1” chunks. Place into a gallon sized zip lock bag and add all marinade ingredients for a minimum of 2 hours and up to overnight. Next, skewer pork and veggies alternating between each of them. Grill over medium-low heat until color starts to form. Grill on all sides before serving. Internal temperature should reach 165 degrees F. for a minimum of 15 seconds. Warm your corn tortillas on the grill right before serving. Remove pork from skewers and add to your favorite taco toppings!
