  • 20 ounces frozen cheese tortellini
  • 1/4 cup pesto
  • 1/4 cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 2 cups arugula

  1. Cook tortellini until al dente (fully cooked yet firm to the bite) and drain.
  2. Whisk pesto, yogurt, and lemon juice together in a large bowl.
  3. Add tortellini and arugula to bowl, toss to combine.
  4. Season to taste and enjoy hot or cold!
