Ingredients

  • 1 lb. boneless pork loin chops, cut into 3/4-inch cubes
  • 1/2 (1.25-oz.) pkg. taco seasoning
  • 4 tsp. vegetable oil, divided
  • 1 cup chunky salsa
  • 1/3 cup peach preserves
  • 1 bag boil-in-bag white or brown rice, cooked

  1. In a large bowl toss pork with taco seasoning plus pepper to taste until evenly coated. Set aside.
  2. In a large nonstick skillet heat oil over medium-high heat. Working in batches, add pork to skillet; cook and stir until browned. Return all pork to skillet.
  3. Add salsa and preserves to skillet; bring to boiling. Reduce heat; simmer, covered, 12 minutes or until pork is heated through (145°F), stirring occasionally. Spoon pork and sauce on rice, and serve.
