Ingredients

  • 3 large peaches, peeled, pitted and chopped (about 2 1/2 cups), divided
  • 1 cup peach preserves
  • 1 tbsp. honey
  • 1 1/2 lbs. boneless top loin pork chops
  • 2 tsp. ground cumin
  • 1 tsp. kosher salt
  • 1/2 tsp. crushed red pepper flakes
  • 1 tbsp. fresh lime juice
  • 2 tbsp. finely chopped fresh cilantro

  1. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). In a small saucepan combine 1 cup of the chopped peaches plus preserves and honey. Place over low heat; cook and stir 5 minutes. Remove from heat and set aside.
  2. Place pork in a shallow dish. Season with cumin, salt and red pepper flakes. Pour preserves mixture over pork, tossing well to coat. Let stand 10 minutes.
  3. For peach salsa, in a separate bowl combine remaining peaches plus lime juice and cilantro; set aside.
  4. Remove pork from preserves mixture and place on grill. Grill 4 minutes per side or until an instant-read thermometer registers 160°F. Serve with peach salsa.
