- Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). In a small saucepan combine 1 cup of the chopped peaches plus preserves and honey. Place over low heat; cook and stir 5 minutes. Remove from heat and set aside.
- Place pork in a shallow dish. Season with cumin, salt and red pepper flakes. Pour preserves mixture over pork, tossing well to coat. Let stand 10 minutes.
- For peach salsa, in a separate bowl combine remaining peaches plus lime juice and cilantro; set aside.
- Remove pork from preserves mixture and place on grill. Grill 4 minutes per side or until an instant-read thermometer registers 160°F. Serve with peach salsa.
