- Preheat oven to 400°F. Arrange chicken in a 2-quart rectangular baking dish.; season with salt and pepper to taste. In a small bowl whisk together marmalade, soy sauce and liquid smoke until combined; spoon over chicken. Bake, uncovered, about 25 minutes or until chicken is no longer pink (165°F).
- Meanwhile, cook rice according to package directions. Spoon sauce and chicken over rice, and serve.
