One-Pot Turkey Pot Pie Pasta

Ingredients

  • 2 Tbsp. Butter
  • 1 Medium onion, diced
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 tsp. Thyme
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 12 ounces Rotini pasta (4 cups)
  • 2 cups Frozen mixed vegetables
  • 1 (8-ounce) pkg. NATURAL CHOICE® Oven Roasted Turkey, coarsely chopped
  • 2 ounces Cream cheese
  • Chopped parsley, if desired

Directions

  1. In a 4-quart saucepan, melt butter over medium heat. Add onions, salt, pepper and thyme. Sauté 3 to 5 minutes, or until onions are softened. Stir in broth, cream and pasta. Heat to boiling. Reduce heat and simmer 12 to 14 minutes, stirring occasionally. Stir in vegetables and turkey, cook 2 to 3 minutes or until pasta is tender and sauce is thickened. Stir in cream cheese until melted. Garnish with parsley, if desired.
