Ingredients

  • 4 large plum tomatoes, cored and halved lengthwise
  • 1 clove garlic, minced (1 tsp.)
  • 2 tbsp. olive oil, divided
  • 1/3 cup soft breadcrumbs
  • 1 tbsp. chopped fresh parsley or 1 tsp. dried parsley
  • 1 tbsp. chopped fresh basil or 1 tsp. dried basil
  • 1 tsp. chopped fresh thyme or 1/4 tsp. dried thyme

  1. Preheat oven to 400°F. Arrange tomatoes, cut side up, in a 13x9x2-inch baking pan. Season tomato tops with salt and pepper to taste; sprinkle with garlic. Drizzle tomatoes with 1 tablespoon oil. Bake, uncovered, 20 to 25 minutes or until softened. Remove from oven.
  2. Preheat broiler to high. In a small bowl stir together breadcrumbs, parsley, basil and thyme. Carefully sprinkle on tomato tops; drizzle with remaining oil. Broil tomatoes 2 to 3 minutes or until breadcrumb mixture is golden. Serve warm.
