Ingredients

  • 3 tbsp. orange juice
  • 3 tbsp. fresh lime juice
  • 2 tsp. sugar or 1 packet sugar substitute
  • 1/4 tsp. hot sauce
  • 2 mangoes, pitted, peeled and cubed
  • 1 large carrot, grated
  • 1/4 cup chopped red bell pepper
  • 1/4 cup thinly sliced fresh mint

  1. In a small bowl combine orange juice, lime juice, sugar and hot sauce; set aside.
  2. In a medium bowl combine mangoes, carrot, bell pepper and mint. Add juice mixture; toss to coat. Refrigerate until ready to serve.
