Ingredients

  • 4 (10- to 12-inch) plain or flavored flour tortillas/wraps
  • 8 oz. brie cheese, sliced (rind removed, if desired)
  • 1 mango, pitted, peeled, thinly sliced
  • 1 avocado, pitted, peeled, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/2 tsp. ground cumin, divided
  • 3 to 4 tbsp. butter, divided
  • Fresh cilantro sprigs

  1. Place tortillas on a work surface. Arrange brie, mango, avocado and onion on half of each tortilla; sprinkle evenly with cumin. Fold the tortilla over the filling and press lightly.
  2. Melt 1 tablespoon of the butter in a large nonstick skillet. Add 1 filled tortilla and cook 1 to 3 minutes per side or until cheese melts and tortilla is golden brown. Remove and keep warm. Repeat with remaining butter and filled tortillas.
  3. Cut quesadillas into thirds. Top with cilantro sprigs and serve with additional mango and avocado slices.
