- Place tortillas on a work surface. Arrange brie, mango, avocado and onion on half of each tortilla; sprinkle evenly with cumin. Fold the tortilla over the filling and press lightly.
- Melt 1 tablespoon of the butter in a large nonstick skillet. Add 1 filled tortilla and cook 1 to 3 minutes per side or until cheese melts and tortilla is golden brown. Remove and keep warm. Repeat with remaining butter and filled tortillas.
- Cut quesadillas into thirds. Top with cilantro sprigs and serve with additional mango and avocado slices.
