Wheat-Free / Gluten-Free
- Preheat grill to medium-high (400Â°F to 450Â°F). Drizzle both sides of steak with 1 teaspoon of the oil, and season to taste with freshly ground black pepper. Set aside.
- In a small bowl combine lime juice, vinegar, cumin seeds, chili powder and remaining 2 teaspoons oil. Brush on corn; reserve remaining lime mixture.
- Place steak and corn on grill. Grill steak 5 to 7 minutes per side or until an instant-read thermometer registers 145Â°F for medium-rare. Grill corn until lightly charred. Remove steak and corn from grill. Let steak stand 10 minutes.
- Meanwhile, cut corn off the cobs into a medium bowl. Add tomatoes, onion and cilantro; stir to combine. Add remaining lime mixture; toss to coat. Slice steak thinly against the grain. Serve with corn salad.
