Ingredients

  • 1 1/4 lbs. Italian turkey sausage links
  • 1 (24-oz.) jar marinara sauce
  • 1 green bell pepper, seeded and thinly sliced
  • 1 red bell pepper, seeded and thinly sliced
  • 1 medium onion, thinly sliced
  • 1 (14.5-oz.) can diced tomatoes, drained
  • 1 tsp. Italian seasoning
  • 5 sub rolls, toasted
  • 1/2 cup shredded mozzarella or provolone

  1. Preheat oven to 400°F. Place sausage in a shallow baking pan. Bake 20 minutes or until an instant-read thermometer registers 160°F, turning once. When cool enough to handle, cut sausage in half lengthwise.
  2. In a large saucepan combine sauce and cooked sausage; bring to boiling. Reduce heat; simmer, uncovered, 5 minutes. Add bell peppers, onion, tomatoes and seasoning; bring to boiling. Reduce heat; simmer 10 to 15 minutes or until vegetables are tender, stirring occasionally.
  3. For each sub, place 2 pieces of sausage on the bottom half of a roll. Top with peppers, onions and sauce, and sprinkle with cheese. Cover with the top half of the roll, and serve.
