Ingredients

  • 2 garlic cloves, minced
  • 1/2 cup fresh lemon juice
  • 1/4 cup chopped fresh parsely
  • 1 tbsp. dried oregano
  • 1/3 cup extra virgin olive oil
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1 lb. boneless lamb, cut into cubes
  • 1 lb. boneless skinless chicken breast, cut into 1-inch pieces
  • 1 (8-oz.) pkg. whole white mushrooms
  • 1 red onion, cut into 1-inch pieces

  1. For the marinade, in a small bowl whisk together garlic, lemon juice, parsley, oregano and oil. Set aside.
  2. Alternately thread bell pepper, lamb, mushrooms, chicken and onion onto 8 skewers.? Season with salt and freshly ground pepper to taste. Place skewers in a baking dish; pour marinade over skewers. Cover and refrigerate 30 minutes.
  3. Preheat grill to medium-high (350°F to 400°F). Remove skewers from marinade; reserve marinade. Place skewers on grill. Grill 6 to 8 minutes per side or until chicken is no longer pink (165°F), basting occasionally with reserved marinade. Transfer skewers to a platter, and serve.
