- For the marinade, in a small bowl whisk together garlic, lemon juice, parsley, oregano and oil. Set aside.
- Alternately thread bell pepper, lamb, mushrooms, chicken and onion onto 8 skewers.? Season with salt and freshly ground pepper to taste. Place skewers in a baking dish; pour marinade over skewers. Cover and refrigerate 30 minutes.
- Preheat grill to medium-high (350°F to 400°F). Remove skewers from marinade; reserve marinade. Place skewers on grill. Grill 6 to 8 minutes per side or until chicken is no longer pink (165°F), basting occasionally with reserved marinade. Transfer skewers to a platter, and serve.
