Ingredients

  • 1 head radicchio
  • 2 heads Boston lettuce
  • 4 Roma tomatoes
  • 2 oz. mozzarella cheese, cut into cubes
  • 1/4 cup sunflower seeds, toasted
  • 3/4 cup low-calorie Italian dressing

  1. Remove cores from radicchio and lettuce. Separate the leaves and rinse gently; pat dry with paper towels. Arrange the leaves on 4 salad plates, alternating radicchio and lettuce.
  2. Cut each tomato into 8 wedges. Place 2 tomato wedges on lettuce on each plate. Add cheese cubes; sprinkle with sunflower seeds. Drizzle with dressing, and serve.
