- Preheat oven to 350°F. Line a baking sheet with foil, and coat foil with nonstick cooking spray. Season fish with salt and pepper to taste. Wrap 1 strip of pancetta around each cube.
- Alternately thread fish and tomatoes onto 4 skewers, leaving a little space between tomatoes and fish. Place skewers on baking sheet. Drizzle with oil, and sprinkle with rosemary and garlic.
- Cover baking sheet with foil and place in oven. Bake 20 minutes or until fish is opaque. Remove from oven, and serve.
