- In small bowl whisk together lime juice, 2 tablespoons of the olive oil, salt and red pepper; pour over tuna and mushrooms. Cover and chill 30 minutes.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Grill tuna, covered, 6 to 8 minutes per side or until fish flakes easily with a fork. Let cool; chop tuna. Brush mushrooms with remaining 1 tablespoon olive oil; lightly re-coat grill rack. Grill mushrooms over medium heat 2 to 4 minutes per side or until tender.
- Serve tuna and mushrooms over mixed greens. Add tomatoes, cucumber and cheese; drizzle with dressing.
