- Stir together mustard, brown sugar, honey and ginger in small bowl.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Place chicken on grill; brush chicken with half of mustard mixture. Grill, covered, 5 to 7 minutes per side, brushing with remaining mustard mixture, until tender and no longer pink (165°F).
- Meanwhile, arrange salad greens on 4 salad plates. Top with peach and red onion slices. Drizzle each salad with 2 tablespoons vinaigrette. Place chicken breast on top.
