Grilled Chicken and Honeydew Salad

Ingredients

  • 1/3 cup light mayonnaise
  • 1 tbsp. rice wine vinegar
  • 1 to 2 tbsp. chopped fresh tarragon
  • 2 1/2 tsp. brown sugar, divided
  • 2 1/2 tsp. garlic pepper
  • 1 1/4 lbs. boneless, skinless chicken breasts
  • 1/3 cup chopped pecans, toasted*
  • 1 cup small honeydew melon ballsâ?
  • 1 large green onion, sliced

  1. Preheat grill to medium (300°F to 350°F). Coat grill rack with nonstick cooking spray. For dressing, in a medium bowl combine mayonnaise, vinegar, tarragon, 1/2 teaspoon of the brown sugar, and salt and pepper to taste. Cover and chill until needed.
  2. In a small bowl combine garlic pepper and remaining 2 teaspoons brown sugar. Rub evenly on chicken.
  3. Place chicken on grill. Grill, covered, 8 to 12 minutes, turning once, or until chicken is cooked through and juices run clear (165°F). Remove from grill and let cool slightly.
  4. Coarsely chop or shred chicken; transfer to a large bowl. Add melon, green onion and chilled dressing; toss lightly. Serve immediately, or cover and refrigerate. Stir in pecans just before serving.
