Ingredients

  • 1 1/2 lbs. ground sirloin
  • 3 garlic cloves, minced
  • 1 chipotle pepper in adobo sauce, finely chopped, plus 2 tsp. adobo sauce
  • 8 slices sharp white Cheddar or manchego
  • Arugula (optional)
  • 8 slider buns, toasted
  • 2 green cubanelle peppers, seeded and sliced

  1. In a large bowl combine sirloin, garlic, chipotle and adobo sauce. Season with salt and pepper to taste. Shape into 8 patties 1/2-inch thick.
  2. Coat pan or grill rack with nonstick cooking spray. Preheat to medium (300F to 350F). Cook 3 to 5 minutes per side for medium-rare (145F) or to desired doneness.
  3. Top each patty with 1 cheese slice. Cook 1 minute or until cheese melts. Place arugula (if desired) and 1 patty on the bottom half of each bun. Top with pepper slices, cover with bun tops, and serve.
