Ingredients

  • 3 tbsp. olive oil
  • 2 large ripe tomatoes, cubed
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 2 cans garbanzo beans (chickpeas), rinsed and drained
  • 3/4 cup chicken broth
  • 1 lb. pork sausage, cut into 1-inch slices

  1. Heat oil in a large, heavy saucepan over medium heat. Add tomatoes and garlic; cook 10 minutes, stirring occasionally. Add bay leaf, beans, broth and sausage. Reduce heat to medium-low; cover and simmer 20 minutes or until sausage is no longer pink. Season with salt and pepper to taste.
  2. Using the back of a spoon, mash some of the garbanzos against sides of saucepan to thicken stew. Remove and discard bay leaf.
