Ingredients

  • 3 containers custard-style vanilla yogurt
  • 2 tsp. grated lemon peel
  • 2 tbsp. fresh lemon juice
  • 1/4 cup packed light brown sugar, divided
  • 2 navel oranges, peeled
  • 2 star fruit, sliced and quartered
  • 2 cups fresh pineapple, cut into 1-inch cubes
  • 1 container fresh strawberries, hulled and quartered
  • 1 pt. fresh blueberries
  • Additional lemon peel, blueberries, strawberries (optional)

  1. In a small bowl mix together yogurt, lemon peel, lemon juice and 2 tablespoons of the brown sugar, stirring until sugar is dissolved.
  2. Separate orange sections; cut sections into bite-size pieces. Place in a medium bowl. Add remaining 2 tablespoons brown sugar plus star fruit, pineapple, strawberries and blueberries; toss gently.
  3. Layer one-third of the star fruit, pineapple, strawberries and blueberries evenly in 8 parfait glasses. Top with one-third of the yogurt mixture. Repeat layers twice with remaining fruit and yogurt. Top with additional lemon peel, blueberries and strawberries (if desired), and serve.
