Ingredients

  • 1 cup flour
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 egg, beaten
  • 2 cups peeled, shredded apples
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tsp. pure vanilla extract
  • 1 cup chopped walnuts
  • Sifted powdered sugar

  1. Preheat oven to 350°F. Grease and flour a 9x5x3-inch or 8x4x2-inch loaf pan. For the batter, in a small bowl stir together flour, baking powder, cinnamon, salt and baking soda. Set aside.
  2. In a medium bowl stir together egg, apples, granulated sugar, oil and vanilla. Add flour mixture and walnuts; stir just until moistened. Spoon batter into pan.
  3. Bake 45 minutes or until a wooden toothpick inserted into the center comes out clean. Let cake cool in pan 10 minutes. Remove cake from pan; let cool completely on a wire rack. Cut into squares, sprinkle with powdered sugar, and serve.
