- Place each chicken breast between two sheets of plastic wrap. Using theh flat side of a meat mallet, pound to 1/2-inch thick. Layer one-fourth of the prosciutto, cheese and spinach on one half of each breast; leave the other half uncovered.
- Carefully fold each breast over filling to enclose. Coat the top of each with 1 tablespoon breadcrumbs, pressing lightly so that crumbs adhere. Carefully turn each breast over and coat evenly with remaining crumbs.
- In a large nonstick skillet heat butter and oil over medium heat until very hot but not smoking. Carefully place chicken in skillet. Cook 3 to 4 minutes per side to brown evenly. Add broth; cover tightly and cook 5 minutes or until chicken is cooked through (165Â°F). Serve whole, or cut crosswise into thick slices.
