Ingredients

  • 1 (14-oz.) can hearts of palm, drained, cut into Â-inch slices
  • 1/2 medium red onion, thinly sliced
  • 1 pt. grape tomatoes, halved
  • 2 tbsp. thinly sliced fresh basil
  • 1 tbsp. white wine vinegar
  • 2 tbsp. extra virgin olive oil
  • 1 garlic clove, minced
  • 1/2 cup crumbled feta (about 2 oz.)

  1. For salad, in a medium bowl combine hearts of palm, onion, tomatoes and basil.
  2. For dressing, in a small bowl whisk together vinegar, 1 tablespoon water, oil, salt, pepper and garlic. Pour dressing over salad; toss. Refrigerate 1 to 4 hours.
  3. Toss salad. Top with feta, and serve.
