Leftover Corned Beef Sliders

  • 2 lbs. Ground beef
  • 2 tbsp. Olive oil
  • 2 estimated cups Corned Beef or Pastrami, thinly sliced or shredded
  • 8 Slider-sized potato rolls
  • 1 tbsp Garlic powder
  • Salt and Pepper, to taste
  • 1/4 cup Mustard (we like a zesty or spicy mustard), for spread

  1. Form ground beef patties just larger than the slider buns, these will be a little thin - that's okay.
  2. Brush patties with olive oil and season with salt, pepper, and garlic powder.
  3. Heat a large skillet to medium-high, and add slider patties. Cook for 2-3 minutes on each side - or until brown. Remove from pan and let patties rest for 5 minutes.
  4. Assemble sliders by placing patty on potato roll, followed by corned beef. Spread mustard on top half of roll.
  5. Serve immediately with potato wedges or leftover Colcannon if you have that laying around.
