Ingredients

  • 1 lb. ground beef
  • 3/4 cup chopped onion
  • 1 (16-oz.) can kidney beans, rinsed and drained
  • 1 (15.25-oz.) can cream-style corn
  • 1 (8-oz.) can tomato sauce
  • 1 1/2 tbsp. Worcestershire sauce
  • 1 tbsp. chili powder
  • 1 tsp. garlic salt
  • 12 corn tortillas
  • 1 cup shredded Cheddar (4 oz.)

  1. Preheat oven to 350°F. Lightly coat a 3-quart casserole with nonstick cooking spray. Set aside.
  2. In a large skillet cook beef and onion over medium-high heat until browned. Drain fat. Stir in kidney beans, corn, tomato sauce, Worcestershire sauce, chili powder and garlic salt. Bring to boiling; reduce heat. Simmer, uncovered, 1 minute, stirring frequently. Season with salt and pepper to taste.
  3. Place half of the tortillas in bottom of prepared casserole. Top with half of the beef mixture. Repeat layers. Sprinkle with cheese. Bake 25 to 30 minutes or until bubbly. Let stand 5 minutes before serving.
