- Preheat oven to 350°F. Coat a rectangular 2-quart baking dish with nonstick cooking spray; set aside.
- In a large skillet quickly brown chicken in hot oil over medium-high heat. Transfer chicken to baking dish. Sprinkle with croutons, oregano and pepper. Arrange tomatoes on top. Tightly cover with foil.
- Bake 15 minutes or until chicken is no longer pink (165°F). Remove foil. Sprinkle cheese on top. Bake 5 minutes more or until cheese melts.
