- Meanwhile, heat butter in a large skillet over medium high-heat. Season chicken with salt and pepper to taste; add to skillet. Cook until chicken is browned on both sides. Pour ketchup mixture over chicken in skillet. Bring to boiling; reduce heat. Cover and simmer about 45 minutes or until chicken is tender and an instant-read thermometer inserted in chicken reaches 165°F. Serve over rice.
