Ingredients

  • 4 (4- to 5-oz.) tilapia fillets
  • 1 cup lowfat buttermilk
  • 3 tbsp. finely chopped almonds
  • 4 tsp. chopped fresh basil or thyme
  • 4 tsp. chopped fresh parsley
  • 1 tbsp. chopped green onion
  • 1 1/2 tsp. grated orange zest

  1. Place fillets in a large resealable plastic bag. Add buttermilk; seal bag. Refrigerate 30 minutes to 1 hour.
  2. Preheat oven to 400°F. Line a baking sheet with foil; coat foil with [[gluten-free]] nonstick cooking spray. Remove fillets from buttermilk; discard buttermilk. Place fillets on foil; set aside.
  3. In a small bowl combine almonds, basil, parsley, green onion and orange zest; season with freshly ground pepper to taste. Top fillets evenly with almond mixture, pressing to coat.
  4. Place baking sheet in oven. Bake 10 minutes or until fish flakes easily with a fork. Serve warm.
