Brown Sugar Roasted Pineapples


  • 2 containers chunked Fresh Divide Fresh Pineapple
  • 1/2 cup Chopped Our Family Pecans
  • 1/4 cup Our Family Pineapple Juice
  • 1/4 Cup packed Our Family Brown Sugar
  • 1/4 Cup melted Our Family Butter
  • 1/8 Cup Our Family Flour
  • 1/2 Tsp Our Family Cinnamon
  • 1/4 Tsp Our Family Salt


  1. In a medium bowl, whisk to combine chia seeds, milk, sweetener of your choice, vanilla if using, and salt.
  2. Preheat oven to 450 degrees Fahrenheit.
  3. Arrange pineapple chunks in a single layer on the bottom of a 9x13 baking dish. Pour pineapple juice over the pineapple.
  4. Mix dry ingredients well in a small bowl. Sprinkle dry ingredients over the pineapples, then toss so that all the pineapples are well coated.
  5. Drizzle melted butter over the coated pineapples.
  6. Roast in the preheated oven for 30 minutes or until the pineapples are golden and the brown sugar mixture caramelized. Stir every 10 minutes.
  7. Allow to cool 5 minutes before serving.
  8. Note: Pop the pineapples under the broiler for 1-3 minutes if you want a more caramelized look.
