- Preheat oven to 375°F. Line a baking sheet with foil; coat foil with gluten-free nonstick cooking spray. Place beets on baking sheet. Roast 25 to 30 minutes or until tender; let cool.
- For the glaze, in a small saucepan combine brown sugar, orange zest, juice and butter. Place over medium-low heat; cook and stir until sugar dissolves.
- Drizzle glaze on beets; toss to coat. Top with pecans and parsley, and serve.
