Ingredients

  • 3 tbsp. Dijon mustard
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. olive oil
  • 2 tbsp. grated Parmesan (1/2 oz.)
  • 1 lb. swordfish steaks, 1?2-inch thick, cut into 4 pieces
  • 1 large tomato, coarsely chopped
  • 2 tbsp. chopped fresh basil

  1. Preheat broiler to high. Line a baking sheet with foil. For the sauce, in a small bowl stir together mustard, lemon juice, oil, Parmesan, and pepper to taste. Place swordfish on baking sheet and brush lightly with half the sauce.
  2. Place baking sheet under broiler. Broil 3 to 4 minutes or until fish is opaque.
  3. Meanwhile, stir tomato and basil into remaining sauce.
  4. Turn fish; top with sauce. Broil 3 to 4 minutes more or until fish flakes easily with a fork. Serve hot.
