- For the sauce, in a small bowl combine chili sauce, ketchup, 2 tablespoons of the lemon juice, and hot sauce; set aside.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Drizzle remaining 2 tablespoons lemon juice over catfish, and sprinkle with lemon pepper and salt. Place fillets on grill. Grill, covered, 5 to 7 minutes per side or until fish flakes easily with a fork.
- Arrange catfish, bacon, lettuce, tomatoes and (if desired) onion on each of 2 bread slices. Spread the remaining 2 slices with sauce, and place on top. Serve immediately.
