Ingredients

  • 1 lb. ground beef
  • 1 (1.25-oz.) pkg. taco seasoning
  • 1 1/4 cups vegetable oil, divided
  • 1 (10-count) pkg. soft corn tortillas (6-inch)
  • 1 (16-oz.) can refried beans
  • 3/4 cup shredded Mexican-style cheese (3 oz.)
  • 1 cup shredded lettuce
  • 1 tomato chopped
  • 1 avocado pitted, peeled and sliced
  • 1/4 cup lemon juice
  • 2 tsp. garlic powder

  1. Meanwhile, for dressing, in a bowl whisk together 1/2 cup oil, lemon juice and garlic powder until combined. Season with salt to taste. Set aside.
  2. In a large skillet, cook ground beef until browned. Drain fat. Add taco seasoning and 1 cup water. Bring to boiling; reduce heat. Simmer, uncovered, 5 minutes. Keep covered; set aside.
  3. In a large heavy skillet heat remaining oil over medium heat to 375°F. Fry tortillas, 1 at a time, until crisp and lightly browned, turning several times. Drain on paper towels.
  4. Place beans in a microwave-safe bowl. Cover and microwave on HIGH 1 to 2 minutes or until heated through, stirring once. Spread warmed beans onto each tortilla, then top with beef mixture. Top each tostada with cheese, lettuce, tomato and avocado; drizzle with dressing. Serve warm.
