Bean and Pasta Bake
- Preheat the oven to 375° F. Cook the pasta according to the package directions.
- While the pasta is cooking, in a large bowl, combine the Neufchâtel cream cheese, diced tomatoes, green chiles, and onion. If the Neufchâtel is too stiff, microwave for 30 seconds until softened. Stir until well combined.
- Once the pasta is cooked, drain and add the pasta, beans, and one cup of cheese to the Neufchâtel mixture. Stir gently until evenly combined.
- Coat a 9" x 13" baking dish with nonstick cooking spray and spoon into the baking dish. Top with the remaining 1/2 cup cheese. Bake for 12 to 15 minutes, or until heated through and the cheese melted.
