Ingredients

  • 1 cooked 12-inch pizza crust or focaccia
  • 1/2 lb. boneless, skinless chicken breasts
  • 2 tbsp. olive oil, divided
  • 1/4 cup barbecue sauce
  • 1/2 small red onion, thinly sliced
  • 1/2 medium red bell pepper, seeded and sliced
  • 1 cup shredded Monterey Jack cheese

  1. Preheat oven to 400°F. Place pizza crust on a baking sheet and brush lightly with a small amount of the oil. Bake 5 minutes. Remove from oven; leave oven on.
  2. Meanwhile, cut chicken into strips 1/2-inch wide; season with salt and pepper to taste. In a medium skillet heat remaining oil over medium-high heat. Add chicken; cook and stir 3 to 5 minutes or until chicken is no longer pink.
  3. Spread barbecue sauce on heated crust. Top with onion, bell pepper, chicken and cheese. Bake 15 to 20 minutes or until cheese melts and is lightly browned.
